My girlfriend Joellen is the kind of friend you want to have. She co-owns a spa with another rockin’ girlfriend of mine, she gives the most mind blowing facial and brow makeover I have ever experienced (I am serious, the brow makeover is my favorite service there), and she loves to talk about all things food!
Joellen knows I HATE throwing away food so she gave me the most genius idea while chatting it up last week. Whenever she is cooking, she keeps ‘throw away pieces’ from her veggies and adds them to a bag in her freezer. Think: tops of carrots, odd pieces of onion, stems from fresh herbs, the tails from green onions, the ends and leaves of celery stalks…you get the idea. You would have even more to add to your bag if you’re a juicer like me!
When she’s ready to make soup, she uses these frozen odds and ends to make…wait for it…homemade vegetable stock! She fills a stock pot with water, adds peppercorns and veggies from the freezer and lets it simmer for a few hours. In addition to making your house smell delish, you get homemade, healthy, clean stock to use as a base for any soup you like!
After it has simmered for hours, strain all of the liquid from the veggies and boom, your soup base is done! Another tip? If you don’t use all the stock, pour into ice trays and when you need a small amount later in the week/month, pop out one from the freezer!
