What on Earth is Chlorella? (No, Really, What is It?)

OK, bear with me here friends.

Chlorella is blue green algae and it is also my current favorite superfood.  I started reading about it a while back and just decided to go for it.  I have a shot every morning. I know, I know. But it really isn’t bad and the benefits outweigh the scary color and interesting taste.

I have included several links here for you to read yourself but here are a few highlights:

I order microingredients brand here in powdered form from Amazon.  Each morning I mix a teaspoon of chlorella with about two tablespoons of cold pressed coconut water (this stuff is so good on its own too FYI).  Shake it up in a clean baby food jar (or whatever you have lying around) and bottoms up! It sort of “sticks” to the sides sometimes so I loosen the remainder up with water and take the rest down the hatch (like a boss).

I used to get sore hands and even have a little bit of a twitch in my hands at times and I think the healing power in chlorella has helped vastly.  I also think it has helped clear my skin. And it’s easy!  One shot and boom, you’re on your way to better health.

Five Minute Superfood Salad= ENERGY!!!!

Why do I eat superfoods? Because they make me feel soooooo good! I get a crazy energy boost and stay full! So how did this salad come about? I walked into my house the other day and was STARVING. This happens a lot because I live in Lynchburg and am definitely not surrounded by healthy and delish food restaurants (although I do have a few sweet fav’s) so I always run home for lunch. Well, I don’t really run, I drive.

I opened my fridge and had a bag of fresh organic chopped Kale that I got super cheap at Aldi’s. The great thing about pre-washed chopped kale is TIME! No washing, no taking out the stem, no chopping, and no cleaning the cutting board. So if you see it, grab it. I got my Simply Blonde Dressing that I always have on hand because it tastes good with everything and is super easy to make. So make it, use it, and always having it waiting around. If you are starving the last thing your going to do is start making a dressing even if it only takes one minute.

Next, what else was in the fridge? I found local feta and that’s it. Then, I hit up my sweet superfood cabinet. If you have it, you’ll eat it. So you have to buy these things and keep them stocked in your pantry or you’ll end up grabbing a bowl of cereal or yogurt or Uncrustable! These will NOT give you sustainable energy.

So here is a list of some of my fav’s that I always try and keep around that I added to my salad.

WHITE MULBERRIES. (love these because they are chewy and sweet. And they are an antioxidant powerhouse with lots of fiber)

HEMP SEED. (adds protein and has a little nutty flavor and crunch)

WALNUTS. (anti-inflammatory and omega 3’s.)

KALE. Because it’s KALE!   (soooooooooo many benefits I can’t even get started.)

GOJI BERRIES: (To me, goji berry converts to ENERGYYYYYY!) Check out Dr. Axe for lots of other health benefits. 

POMEGRANATE: (powerful disease protection) Eat them everyday if you can. When they are not in season you can get them frozen.

ALMONDS: (they’re crunchy, affordable, and a HEALTHY FAT–guys, we need fat. It keeps us satiated and super good for brain health. We just don’t want the crappy Twinkie and Krispy Creme kind of fat—-well, not on a daily basis.

Ingredients
  • 3 cups chopped organic kale
  • 2 TBS.local feta
  • 1 TBS. slivered almonds
  • 2 TBS. white mulberries
  • 1 TBS. hemp seed
  • 2 TBS.organic walnuts
  • 1TBS. organic raisins
  • 1 TBS.goji berries
  • local honey to drizzle
  • pink salt to taste
Instructions
  1. Massage Simply Blonde Dressing into kale. Add toppings as desired. Drizzle honey on top. Feel amazing.

 

If you want to get crazy, I sometimes heat my nuts with a little coconut oil and add turmeric, cumin, and curry for an added superfood and flavor boost.

Get shopping and keep that pantry stocked with these goodies.

Two-Minute Power Breakfast—it’s vegan and raw too.

We say it all the time. We are busy! There’s no time for breakfast! My clients always tell me the only thing they have time for is a bowl of cereal. Granted, there are some pretty good cereal options out there. But they are still processed and not always organic. This is a new favorite of mine because it is soooooo easy and it is LOADED with nutrition and will keep you going the whole morning. Even try it for a lunch or a light dinner. If you want it to taste even better……whip up a batch of homemade almond milk. Just FYI, when I make my almond milk my ratio is 4 cups filtered water to one cup almonds and I add 2 dates in before straining to get a little sweetness.

Ingredients
  • 1 organic apple
  • 1 Tablespoon raw pumpkin seeds
  • 1 Tablespoon chopped raw walnuts
  • ½ Tablespoon hemp hearts
  • 1-2 tablespoons organic raisins
  • 1-2 tablespoons organic white mulberries
  • Toppings:Sprinkle of unsweetened coconut and chia
  • Drizzle some local honey if desired (if you like a little more sweetness)
  • ½-one cup nut milk (I use home made almond milk)
Instructions
  1. Dice apple.
  2. Add all other ingredients except coconut, chia and honey.
  3. Pour milk.
  4. Add toppings.
  5. Eat and feel insanely awesome.

So is eating raw food better? There are so many benefits to eating raw foods. The number one is super quick meals with a  ridiculous amounts of nutrients and enzymes for easy digestion.  I’m pretty sure it’s hard to find raw Oreo’s, Ice-Cream, or Dorito’s. I’m trying out a summer raw cleanse and am in the midst of it so I’ll let you know how I felt when it’s over.  I can say I have been 72 hours without a cup of coffee which is pretty much a living miracle and I only got a slight headache on day 1. Now on day three and am I loving this cleanse?  No….but I do actually like it.  Check out this article from Dr. Axe on the pro’s and con’s of eating raw.

Chocolate…

chocolate almond butter overnight oats

I just discovered a new favorite website for food inspiration and recipes y’all.  The Healthy Maven is literally, like, the BEST.  There are tons of things I want to try such as Sweet Potato Noodle Pad ThaiTropical Sriracha Chicken Salad, and Superfood Hot Chocolate.   However, the pictures of this Chocolate Almond Butter Overnight Oatmeal spoke. to. me.  Loudly.  

I had to make it immediately.  All the ingredients were already in my cabinet (I LOVE it when that happens) so I made it right away and then just had to wait overnight for them to work their magic.

I added a large tablespoon of almond butter to my original mixture (because why not?), a squirt of honey, and a few cacao nibs.  I didn’t heat it up the next morning either like the recipe suggests, I like mine cold!  I just added a few more drops of almond milk, almond butter, and cacao. Sooooo tasty.  This would be a great lunch, 3pm slump snack, or even dessert!  You can’t go wrong with this combo…make it right now.
