Every year for Christmas I like to get something local for my neighbors, friends, and family (and something that could work as a hostess gift at holiday parties). Last year I got some beautiful honey from the market and attached a tag listing ways that Douglas and I like to use local honey in our kitchen (salad dressings, marinades, on a cracker with cheese, etc). This year I was talking to the blondes looking for a new idea and Tiffany suggested I contact Shirley Carwile at the Lynchburg Community Market.
And she’s the sweetest. At her booth you can find jams, jellies, relishes, salsa, baked goods, even crafts and towels! She has been making these delicious creations for forty five years and selling at the market for twenty eight! Incredible! Go check her out, buy some jam, and learn more of her story. She was farm raised, has almost always had her own garden, and believes everyone should be able to have locally grown and home canned food. Her favorite thing about being at the market is the people!

Now that Rachel has stocked our pantry and our freezer I would like to reintroduce one our favorite convenient shopping options, Relay Foods. Relay’s Thai Peanut Chicken recipes is to die for. I love the many recipes on their site that push me to try different spices and exotic ingredients that may be hard to find. I tend to find these types of recipes but have to travel around town to complete my grocery list:
1 pound chicken breast, cut into thin strips or chicken drumsticks
In a large mixing bowl, whisk together coconut milk, red curry paste, peanut butter, salt, white vinegar, grated ginger, minced garlic, and chopped cilantro.
If using chicken breast: cut into thin strips and remove any unwanted fat. Place the chicken breast strips in the large mixing bowl, and cover with the sauce to marinade for about 1 hour, longer if time is available. If using chicken drumsticks simply add to the mixing bowl, cover and let marinade for at least 1 hour.
If using chicken breast: in a medium-sized skillet, over medium heat, add chicken with the marinade and simmer until chicken is cooked through, about 5-8 minutes. Serve over rice and enjoy.
If using drumsticks: cook on the grill over medium heat, basting and turning as needed to evenly cook and crisp up chicken skin.
Remove any leftover chicken from the bone and add to African Peanut Stew.
I love this salad because it has the perfect combination of salty and sweet. Not to mention it will taste like you slaved…. but in reality it takes about two minutes. So this weekend—-when everyone else is bringing chips and canned dip, good ole country fried chicken, greasy burgers, and ice pops (loaded with more red and blue dye than I like to eat in a lifetime wrapped in one 12 inch piece of plastic) to the end of summer barbecue–you’ll show up with this gorgeous salad that is nutrient dense, filled with natural color, hydrating AND tastes insane. As Mary (kitty) would say….you will ooooohhhh the crowd with this one.
