Meatless Mondays: what’s the deal

Guess what? I had a beautiful post for you guys that took me an hour and the site crashed….. without saving the content. WTF

To make a long story short, I was writing about my “foodism” and how I eat through out the week until Friday. My last post had descriptions on food in Indonesia, Barbados, London, etc. It was more of a heart felt post on my love for food. It was poetic in my mind but maybe it was really awful and that is why it crashed on me. I will keep telling myself that.

So let’s talk meatless Mondays. I am actually a huge fan of this trend for so many reasons. I love that a whole family will practice not eating meat for a day because I find it to be a day of exploration and getting creative with plant-based meals. A day without meat? Imagine that! This trend is actually not a new campaign..  it was launched during WW I and revived in WW II in efforts to feed war ravaged Europe. It was launched again in 2003 to raise awareness about excessive meat consumption in the US and across the world. Did you know that the average American consumes 75 more pounds of meat PER YEAR than the past generation..?  That’s a meaty generation. With the trend going global, we see an amazing effect it has on both our bodies and our earth.   It Click here to read more about the movement.

On a personal level, as I was writing my heart felt long lost post.. I wrote about my beloved truffle fries and vodka sodas every Friday. I enjoy my weekends with my family which usually include delicious food that I do not eat through out the week. I am a light eater who likes to graze on smoothies, green juice, homemade chips,  and bountiful salads that love me back. I sleep better, feel better, and in return are a much more pleasant person to be around when I am eating like this. Please trust me when I say it has taken me 10 years to figure this out. I have suffered ulcers, wheaty allergies, highs and lows and I am always changing up my eating habits but at this point in my life I crave these things.  On the weekends, I crave French fries, Korean duck sliders, and a pound of my boyfriend’s guacamole. It’s a great balance for me. By Monday, I am feeling ready to get back on track. Unlike a lot of my fellow Americans, I love Mondays. I am always ready for a good cleansing day full of motivation and setting up my week. This has a lot to do with a job I love and a day to get back on track for the week.

I have been practicing Meatless Mondays (or what I call cleansing Mondays) for a bit now and really feel it is a great day to reset and get rid of the brain fog. I have passed this ritual along with clients and friends who have also felt it has been very beneficial for the same reasons.  My cleansing Mondays vary with whatever I have around.. I will have a couple cold pressed juices,  a delicious green smoothie, and sip on our BEC tonic through out the day. I usually try to get creative with the family to make sure our vegetarian meals are delicious so the kids understand plant based food IS delicious and our meals do not have to revolve around meat.. I am honestly NOT against eating meat- I have never asked my clients to go vegetarian unless we are doing it for a special challenge. But I do believe in eating less meat. This makes it way more reasonable to ask people to eat high quality, local (if possible) meat that is from a healthy animal which will fill you with quality nutrition in return.

Food Babe’s Cauliflower Taco Salad

Serves: 4
  • 1 cup sprouted lentils
  • 1 head cauliflower, cored and broken into small bite size florets
  • 1 tablespoons coconut oil
  • 1 medium yellow onion, diced
  • 1 jalapeno, seeded and minced
  • 2 cloves garlic, minced
  • 4 teaspoons chili powder
  • 2 teaspoons ground cumin
  • ½ cup of your favorite tomato sauce or tomato puree
  • 1 teaspoons salt
  • ½ teaspoon ground black pepper
  • ½ cup chopped cilantro
  • 1 large head of romaine
  • 1 lime cut into wedges
  • 1 avocado cut in slices
  • sour cream (optional)
  1. For the taco filling: Rinse the lentils and drain well.
  2. Combine the lentils and 3 cups water in a small saucepan.
  3. Bring to a boil, then reduce the heat to low and simmer until tender, about 30 minutes (or 5 mins if you are using sprouted).
  4. Drain off excess water and set the lentils aside.
  5. Pulse the cauliflower in a food processor or chop by hand with a knife until reduced to pieces the size of rice grains.
  6. Heat the coconut oil in a large skillet over medium heat.
  7. Add the onions and jalapenos and cook until the onion is translucent, 5 to 7 minutes.
  8. Add the cauliflower, garlic, 2 teaspoons of the chili powder, 1 teaspoon of the cumin and cook for 4 minutes.
  9. Stir in the tomato sauce and cook until the cauliflower is tender, another 3 minutes.
  10. Add the cooked lentils to the cauliflower mixture. Add the remaining 2 teaspoons chili powder, 1 teaspoon cumin. Stir in the salt and pepper and cook for 3 minutes more to blend the flavors.
  11. Combine with chopped cilantro and place mixture over romaine leaves
  12. Top with fresh lime juice, avocado and/or sour cream

California Dream Board


We just returned from our amazing California adventure. We had so much fun meeting new people, trying delicious food, working out to a new beat, soaking up the vitamin D, and feeling rejuvenated with so much inspiration. . I have picked up a few minor obsessions that were just around the corner from our beach cottage. My Juice Cleanse Experience



I am back to let you know how the cleanse went. Listed are a few side effects that I had… which I have not had in my previous juice cleanses. I am still suspicious that I was fighting a virus due to the fact that most people in my life have been ill the past two weeks.

My cleanse was delivered to my door in a cooler bag with eighteen juices. I chose the three day cleanse 2 which contains green juice(S), citrus, lemon cayenne, and the most delicious dessert like almond drink for dinner. They all vary in natural sugar content and the cold pressed almond drink contains a bit more calories that seemed to settle my stomach for a good nights sleep.

A few things I experienced:

1) Never, ever plan to prepare a great amount of food for others when you are drinking juice. I planned meals like cereal and oatmeal as oppose to eggs and home cooked breakfasts I usually feed my kids. They were happy and content with their favorite cereal in the morning. I prepared their lunch at night while I felt satisfied with my almond drink and had my sweet boyfriend prepared dinners at night. I am thankful I have a guy who prepares delicious, healthy food to hold the fort down.  I did prepare them the easiest crockpot meal on earth that every household should prepare for chicken stew lovers.

2) My hunger would usually strike right around juice #5–mostly because I do not particularly love this blend of spicy lemonade. Don’t get me wrong, I love lemon water with a pinch of cayenne but this one is not my steeze.. Instead, I made my own. This was when our BEC tonic saved my cleanse life. Having a hot water after drinking cold all day is amazing. It sounds so simple but these simple things become strait bliss when you are on juice for days..

3) DO not set yourself up for failure! I reminded myself that many of us may feel like engulfing your furniture at some point during the cleanse. If a few techniques (breathe deep, nap, read a book, anything) do not work then be prepared with a few organic almonds (soaked in water overnight) , a clean and simple soup, or a light smoothie. How do you know when you should have a little “extra’? You will know. Shaky, starving, or “off”… grab a little something. You want this to be a positive experience. The almond drink saved my life every night.

4) Nap. I slept a LOT during my cleanse. If I did not cohabitate with angel children then this would not happen. I think I either napped or fell asleep early to gain an extra 5 hours of sleep each day. I have never experienced this in a cleanse(or life) because I had never been so tired. I freaking missed the most awful (but awesome) show on earth (the RHOBH<– see how I coded that so only the peeps know who KNOW) It was amazing.

5) This is the number that I am still confused about. I had a BANGING headache that would come and go. Now, I could have been fighting off a virus but whatever it was this detox was involved. I started my cleanse because I could feel my body was really off balance and incredibly achy. It subsided after practicing hot yoga. Each time I sweat and moved a bit I felt like a billion bucks. I was on such a high I wanted to write my teacher love notes. This could be different for each person depending on who you are(as far as movement). I do feel like a little sauna action(sweat) to make sure to move the toxins through is important. I would suggest a minimum of a brisk walk each day…

6) Do something for yourself. Get rubbed on by a professional. Getting a massage will help move the toxins through your body…. get a facial with someone who uses natural ingredients. Don’t feel bad. It’s for your health!

7) Each cleanse and each person is different. I feel as though this has been the most successful cleanse I have done yet. I rated my energy levels a 6 (on a scale of 1-10) pre cleanse and yesterday I was feeling a 10. My stomach is feeling a million times better and I have yet to truly break the cleanse. I have had a few more juices, nuts, and a bit of salmon but have not had any added or refined sugar, dairy, or grains. I will eventually be adding things back in but right now my body is just too damn happy.

My skin is brighter, my body feels lighter, and yes it is all rainbows from here. I have revamped my love for hot yoga and have meditation goals for the future.

Juice Cleansing


Just FYI to all, I purchased my first cleanse of 2015 to start on Wednesday. I have a few clients that are trying it this spring so a lot of talk has been going on about juice cleanses. This is early for my first cleanse and I am a bit nervous about drinking cold juice for three days when it is cold but I feel as though I have done them enough to know what to expect by now. I feel juice confident and look forward to it, I think… I have a LOVE/LOVE  relationship with juice cleanses and I will tell you why..

1) I have ailments that bother me- aches and pains that are normal for me this time of year..  when I cleanse I feel like those aches and pains get way better and sometimes go away. Cold pressed Juice is full of nutrients and lacks fiber so my body can focus on healing instead of breaking down fiber. <—-(obviously we love fibrous food on a normal occasion so we can stay full)

2) Our companies are killing it, my family is amazing, and we have so many great things going on NOW and in the future that I want to keep up with! That little cloud surrounding my brain that is hard to break through sometimes, aka. brain fog is creeping up on me. I forgot my address yesterday. I feel as though I am a unicorn and can accomplish anything after I cleanse.

3) My skin is BETTER but it needs some work. The harsh cold temps have made me an ashy mess. I see a difference after a full cleanse. Some true vitamin D and salty air/water could help too ;)

4) Energy on top of my mental focus is a plus. I have to work to keep my energy levels up with my business partners and children so a jump start will not hurt me.

5) With my  clients (I love my girls) jumping on board with the cleanse this spring, I need to be reminded how hard it is! <– that’s when I should say it’s like a LOVE/LOVE/I HATE YOU I NEED FOOD relationship.   I plan on keeping a journal and writing down some techniques on how to be successful because I do not want ANYONE feeling like a failure. Some people may need a little substance and that is ok.

Those are my personal reasons. Now people, although the benefits look wonderful, juice cleanses are not ALL unicorns and rainbows.  For those of you who try it for the first time I have many, MANY suggestions. That will come to you in the future for I will be reminded quickly on Wednesday on those suggestions which I plan to share. Some ask why I do not just make the juice myself… Well, I have tried that before and It is definitely not for me. I love the idea but I almost went insane when we tried it and my girl Tiffany did most of the work. (haha) I value the benefits almost that much (yes, it is expensive) and understand that there is A LOT of fruit and veggies going into that bottle. Juice cleanses are not for everyone and you do no have to juice to have a cleansing experience. Everyone is different!
