I love a good soup, no matter what time of year. I was looking for a new recipe for a Spring soup that was heavy on veggies and came across this Spring Vegetable Quinoa Minestrone on Simply Quinoa. It was SO EASY to make and super tasty. I left out asparagus because I wasn’t feeling it, used chicken stock instead of water, and crushed tomatoes with basil. DELISH. The quinoa makes it a little heartier too but without being heavy like noodles or rice.
I made a larger pot and took a few bowls to my grandmother for her dinner this week too. That’s another thing I love about soup, it’s so easy to share!
