Overnight Oats…My New Obsession…

Doesn’t take much I guess…but whatever.  Have y’all ever made these before?  I had never even really heard of them until I was telling my girlfriend how many jars of almond butter I seem to plow through every week and she asked if I ever used the last remaining bites to make over night oats in the jar?  Say what?


Um, no.  I have not but I did last night and probably will every night for like…ever. Here’s what I did.

I took a jar of almond butter that was almost empty.  I scooped the last bits up so it wasn’t stuck at the bottom.  Then I threw in oats, almond milk, honey, cinnamon, frozen blueberries, chia, hemp hulls and goji berries.  I shook everything together and placed in the fridge.

  • Almost empty jar of nut butter
  • 1 cup of unsweetened vanilla almond milk (I used Silk)
  • ½ cup of organic steel cut oats
  • 1T honey
  • 1t cinnamon
  • 1t chia seeds
  • 1t hemp hulls
  • 6-8 goji berries
  • 12-15 frozen blueberries
  1. Mix everything together and place in the refrigerator over night or at least 12 hours. The next morning shake gently and enjoy!

Fifteen hours later I shook the jar, grabbed a spoon, and went to town.  It was such a creamy, cold, tasty breakfast.  Perfect for on the go too.

I love when I make something so easy and delicious and know it’s going to become a part of my rotation.  You probably have everything in your kitchen to make your own variation. Right. Now.

    Claire and I just stuck our jar in the fridge for tomorrow :) mixed it up while sipping our BEC Tonic!!!
