I was looking for a recipe I could make for dinner tonight but also could freeze some leftovers for later. I found this Vegan Black Bean Soup recipe on Cookie & Kate and ran to the store to get what I needed. It comes together in no time which is essential for me. The only thing I did differently was I blended ALL of mine in the Vitamix at the end. I just prefer the creamier texture but you do what you want. I topped mine with Fage full fat Greek yogurt and cilantro. It would be fabulous served alongside some spicy margaritas and cool guacamole.
