Kidney Bean Hummus…Seriously

The 3pm slump gets me every time if I am at home…I begin to open my fridge and want to graze.  Last week I decided to whip up a quick snack that I wouldn’t regret eating with things I already had around the house (LOVE it when that happens).  This kidney bean hummus has a really great color, a kick of spice, and is loaded with fiber and protein.

Ingredients
  • One can organic dark red kidney beans
  • One garlic clove
  • Chopped green onions (I used a lot but use however much you want)
  • Half of one jalepeno
  • 2T EVOO
  • 1T Cumin
  • 1T Chili Powder
  • S&P
Instructions
  1. Place all ingredients in your food processor on high until desired consistently. I like mine a little chunkier. Scoop into a beautiful dish and enjoy with crudite or Mary's Gone Crackers. Boom, done!

    Thanks for this new version of hummus !!! If they sold it in gallons I would buy it I use it instead of mayo to crackers !
    Would it be as good if I use chopped garlic from a jar ? ( I grow my own garlic chop it all at once and put in ice cube trays half full and pull it out to throw in dishes ) I also will but the jar from Sams that’s prechopped and so convenient but only if it’s GMO.
