The 3pm slump gets me every time if I am at home…I begin to open my fridge and want to graze. Last week I decided to whip up a quick snack that I wouldn’t regret eating with things I already had around the house (LOVE it when that happens). This kidney bean hummus has a really great color, a kick of spice, and is loaded with fiber and protein.
- One can organic dark red kidney beans
- One garlic clove
- Chopped green onions (I used a lot but use however much you want)
- Half of one jalepeno
- 2T EVOO
- 1T Cumin
- 1T Chili Powder
- Place all ingredients in your food processor on high until desired consistently. I like mine a little chunkier. Scoop into a beautiful dish and enjoy with crudite or Mary's Gone Crackers. Boom, done!
