My sister in law in Richmond sent me an article a few months ago about Sweet Potato Toast. OMG. Who knew? It is like the new #avocadotoast, y’all. And it can easily meet (almost) EVERYONE’s vast dietary needs and wants.

- Check out mind body green for awesome articles and tips on EVERYTHING but this link has TEN tasty ways to top your tater. Some are more complicated than others. I am a fan of avocado and poached eggs but the coconut cream and strawberries looks pretty insane too.
- Epicurious is my go to fancy schmancy site when I am looking for dinner party worthy bites. They sort of walk you through the beginnings of the toast here and then leave the toppings up to you. This is a good place to start for SPT neophytes.

I am thinking of topping mine in the morning with local butter, cinnamon, coconut sugar and a dash of pink salt…easy and so good!
Make these! For your kids back to school snack (replace that nasty Quaker Granola Bar or corn syrup filled Nutri-Grain or flammable Dorito’s or the no nutrition Goldfish or Pretzels or…….blah, blah, blah) OR for you for a 3 o’clock goody (and ditch the sugar laden frappacino or the gmo and pesticide protein bar) OR for your hubby for breakfast (instead of the Pop Tart or caramel color flavored oatmeal or the good ole Egg McMuffin.) Why am I recommending a mix instead of homemade? Because the ingredient list is clean, it took me only two minutes to prep, and they tastes good. The mix comes in banana too and if you feel like a little more sweet, add a few organic semi-sweet chocolate chips to the batter.
Ingredients for Pumpkin Muffins: Almond Flour, Organic Coconut Sugar, Pumpkin, Arrowroot, Organic Coconut Flour, Organic Spices (Cinnamon, Nutmeg, Cloves), Baking Soda, Sea Salt
