Have You Heard Of…






I just discovered it and find it to be so cool/cute/creative, I had to share.  Raddish is a cooking club for kids with a monthly delivery full of all kinds of goodies!  You don’t get ingredients, which is awesome because the box is not time sensitive. Instead, each box has three illustrated recipe cards, three skill cards, a project to complete in the kitchen (such as making a solar oven!), a kitchen tool (think measuring cups or something kid safe), and some digital extras!  An example of a digital extra is below…a grocery store scavenger hunt!

Convenience is Key: Highlight on Relay Foods


Now that Rachel has stocked our pantry and our freezer I would like to reintroduce one our favorite convenient shopping options, Relay Foods. Relay’s Thai Peanut Chicken recipes is to die for. I love the many recipes on their site that push me to try different spices and exotic ingredients that may be hard to find. I tend to find these types of recipes but have to travel around town to complete my grocery list:

Thai Peanut Chicken
Prep time
Cook time
Total time
Recipe type: Thai
Serves: 4 servings
  • ½ can coconut milk
  • ½ cup red curry paste
  • ½ cup creamy peanut butter
  • ½ tablespoon salt
  • 2 tablespoons white vinegar
  • 1 teaspoon ginger, grated
  • 2 teaspoons garlic, minced
  • ½ cup cilantro, chopped
  • 1 pound chicken breast, cut into thin strips or chicken drumsticks
  1. In a large mixing bowl, whisk together coconut milk, red curry paste, peanut butter, salt, white vinegar, grated ginger, minced garlic, and chopped cilantro.
  2. If using chicken breast: cut into thin strips and remove any unwanted fat. Place the chicken breast strips in the large mixing bowl, and cover with the sauce to marinade for about 1 hour, longer if time is available. If using chicken drumsticks simply add to the mixing bowl, cover and let marinade for at least 1 hour.
  3. If using chicken breast: in a medium-sized skillet, over medium heat, add chicken with the marinade and simmer until chicken is cooked through, about 5-8 minutes. Serve over rice and enjoy.
  4. If using drumsticks: cook on the grill over medium heat, basting and turning as needed to evenly cook and crisp up chicken skin.

  6. Remove any leftover chicken from the bone and add to African Peanut Stew.

Food Subscription Service Home Chef…I Finally Tried It!

Remember like forever ago I wrote a blog about food subscription services?  Well a million months later I finally pulled the trigger, thanks to some nudging from a girlfriend of mine in Richmond who LOVES Home Chef.

She sent me a discount code (woohoo) and I ordered three nights worth of meals for two with free shipping for $39.99.  Yes, that was discounted by $20 but what a steal either way for six dinners!


I was able to look through SEVERAL options and give specific dietary restrictions if I wanted (gluten free, vegetarian, no dairy, etc). My first questions were is the produce organic, is the seafood wild caught, and is the protein hormone free?

Unfortunately, I still don’t know the answers (enter sad face emoji).  Home Chef states that they use organic products “whenever possible” but they don’t tell you on the actual products which is a definite concern.

However, sometimes convenience is number one and Home Chef is nothing if not SUPER CONVENIENT.

It is delivered to your door packed in ice with all ingredients pre-portioned out.  You have to do some minor chopping of veggies but EVERYTHING else is the exact amount you need.  Think: tiny containers of mustard, salt packets, cumin packets,

Each meal comes with a full color recipe card with photos and instructions down to the plating.  Then, when you’re finished you just pluck the card into the three ring binder they send you with your first order.


I can see how this concept would really appeal to people who never cook or don’t know how but for me, an avid home cook, it’s great because I can follow the recipes as much or as little as I want.  I can use my ingredients when I want and add to the items sent to me.  For example, I obviously don’t use the table salt they sent but instead replace it with pink salt (no brainer).


You can skip weeks whenever you want and cancel anytime so you have nothing to lose.  It is worth a try for sure!  I have liked all six of the meals I have tried so far and have three more coming next week.

Have you guys ever tried Plated or Hello Fresh or Blue Apron?

We all know I love to cook.  Buuuut the fall and holiday season is cray and I think it’s the perfect time to try this convenient service.  After a lot of research I decided to start a Plated subscription.  Here’s the deal straight from the peeps at Plated:

Some of the menu items that grabbed my attention were:  Quinoa and Goat Cheese Stuffed Swiss Chard Rolls, Chicken Tortilla Soup, and Sole with Lemon Caper Sauce.

Delicious and easy enough right?! I would love to know if anyone has experience with this service!  I will keep you posted on how it goes for me (obvi).
